How We Grow

We believe freshness starts at the source. Every bottle of Enoki begins with a balanced mix of locally sourced hardwood sawdust and natural nutrients. The substrate is hydrated, sterilised, and inoculated on-site to ensure a clean and controlled start to each crop.

Growing in reusable bottles provides a stable, uniform environment for the mushrooms. The narrow opening supports the tall, straight growth Enoki is known for, and the closed system keeps the growing environment clean and consistent from batch to batch

Once the mycelium has colonised, the bottles, they are moved through carefully managed temperature, humidity, and airflow stages to guide healthy, even development. When the mushrooms reach peak maturity, they are harvested from the bottles and packed fresh in Melbourne’s northern suburbs.

This end-to-end method gives us full control over the process — producing Enoki with reliable texture, shape, and freshness every time.

Everything at Oznoki is grown in bottles, with no plastic bags used in production of the spawn or the mushrooms.

Controlled Cultivation

Each bottle acts as its own micro-environment, reducing the risk of contamination and maintaining consistent growth conditions. This allows for high levels of hygiene and uniform quality across every harvest.

Reduce waste

By growing in durable, reusable bottles, Oznoki avoids the single-use polypropylene bags used in traditional mushroom farming. At current production, this prevents over 1,700 plastic bags — and around 74 kg of plastic — from entering the waste stream every week.

Designed for Enoki

The bottle format supports the tall, slender growth that Enoki mushrooms are known for. It promotes even density, clean stems, and the delicate appearance sought after in premium Enoki.

Consistency

Every bottle is filled, inoculated, and grown in-house — ensuring complete control from substrate to harvest. This traceability helps deliver mushrooms with consistent size, texture, and freshness.
